Chef Abbey and her 3-ingredient Peanut Butter Cookies

This afternoon the kids and I decided to bake some cookies.  For some reason, rainy days always make me want to bake.  Anyway, Abbey asked if she could make them all by herself.  "Of course!" I said.   I knew that the recipe I had in mind was one of our easy peasy go-to cookie recipes:  3-ingredient Peanut Butter Cookies.  So saying "yes" to her request was pretty easy.  The recipe literally has three good, clean ingredients in it:  peanut butter (which we grind fresh from peanut at our local grocery store to make sure the only ingredient is peanuts--and not added junk ingredients like sugar and oils), pure maple syrup and sea salt.

Anyway, because it was her first time cooking all by herself from start to finish, I decided to document the process.  (And I helped her put the cookie sheet into the oven, because it was a little heavy for her little hands, which were engulfed in the massive oven mits). 

Here is a video of her making the cookies.  (Notice I squeezed in some math lessons while I was at it?  Math and cooking always goes nicely together.)





First, you put one cup of peanut butter (make sure the only ingredient is peanuts) into a food processor.  We just use our blendtec blender.


Then add 1/4 cup plus 1 tablespoon of maple syrup and 1 teaspoon of sea salt into the food processor and blend together.  


Scoop out balls of cookie dough using a little cookie scoop.  Then, smash the balls down with a fork to make the cookies flat.  If you would like to add a few chocolate chips to each cookie, go right ahead.  Chocolate and peanut butter is always a yummy combination, right?


Bake in the oven at 350 degrees for 10-12 minutes.
